Maine Lobster Salad on Endive
There are few ingredients more decadent and desirable than fresh Maine Lobster. Therefore an evening of gourmet cuisine would simply be incomplete without it. For this holiday season, Executive Chef Jim Nuetzi has created a simple but sublime Lobster Salad on Endive.
Ingredients (Serves 24)
| Lobster Meat (cooked meat) | 1 Lb. |
| Fresh Lime Juice | 1 Tbsp |
| Celery, diced (1/4 inch) | 1/2 cup |
| Green Peppers, diced (1/8th inch) | 1/8 cup |
| Mayonnaise | 1/4 cup |
| Sour Cream | 1/4 cup |
| Parsley, chopped fresh | 1 Tbsp |
| Salt, kosher | 1/2 tsp |
| Endive Leaves, small | 24 each |
| Chervil Sprigs (or fresh, flat leaf parsley) | 24 each |
Preparation
1. Sift through the lobster meat a handful at a time and remove any shell fragments or cartilage and place in stainless mixing bowl.
2. Add remaining ingredients to lobster and gently mix until well combined.
3. Refrigerate until ready to use.
4. Wash the endive leaves, and trim off the root end.
5. Place ½ ounce of lobster on center of endive leaf.
6. Garnish with chervil sprigs.
